Tonight was the third time I made these and I LOVE them! So much more yummy and I would think (and hope!) - better for you.
I take one large sweet potato (for just me) - wash it off - hardest part is cutting it up. I like smaller fry like shapes - but you could do larger wedges. Dump that in a gallon zip lock and add a few tablespoons EVOO and shake till all the pieces are coated. Dump them out and spread on a cookie sheet (I like to use tin foil on the cookie sheet) and sprinkle with either a grill seasoning or I use an all purpose seasoning. Bake at 425 degrees 20 - 25 minutes - depending on how thick you cut and how crispy you want them.
Let cool a little - and oh my! Delicious! I'll have to take a pic next time I make them - which could be very soon!

that's exactly how we make them, and they're so yummy! My 2 year old loves them, too. We were surprised because my hubby and I both hate the really sweet/ sticky sweet potatoes that you get in restaurants. These are so much better!
I know what you mean! So much more flavorful than a regular potato. More restaurants should serve them!
